VEGGIE-EGG SANDWICH

Fried eggs with bread is great for breakfast but please, we want something a little different. I tried this some days ago, when I ran out of breakfast ideas, and it came out really delicious.

 

My Veggie-egg sandwich is quick to whip up on busy mornings, and did you know you can boil eggs and store for up to 7 days, and they wont go bad?? Wow! now you know, so no need to boil eggs everyday. 

The taste of fresh tomatoes, black pepper, and boiled eggs will make a party in your mouth! Your kids will ask for more. 

This sandwich is perfect forchildren from 1 year old, and for everyone in the family.

You dont need so many items to make it, and it takes just 4 easy steps! No, 5. The 5th step is ‘Enjoy’! Lol

RECIPE 

2 boiled eggs

2 fresh tomatoes

1 tablespoon mayonnaise

Some cabbage slices

Some sweet corn

Some grated carrots, green peppers

Some shredded chicken (optional)

Pinch of black pepper (optional)

METHOD

1. Boil eggs till hard and set aside

2. Prepare your ingredients. slice the tomatoes. Grate the carrots, cabbage, peppers.

3. Bring all together in the same bowl. Add the black pepper, chicken, sweet corn etc and mash/mix all together with a spoon. 

4. Fill some slices of bread with the egg mix and cover with another slice.
